Vegan Tofu Burrito Recipe

A hearty vegan burrito filled with marinated tofu, sautéed veggies, and a blend of spices wrapped in a soft tortilla.

Ingredients
  

  • 400 g firm tofu pressed and cubed
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 garlic clove minced
  • 1 small onion diced
  • 1 bell pepper sliced
  • 1 cup cooked brown rice
  • 4 large tortillas
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method
 

  1. Heat olive oil in skillet; sauté onion and garlic until fragrant.
  2. Add tofu cubes, cumin, paprika, salt, and pepper; cook until golden.
  3. Toss in bell pepper slices; cook for 5 more minutes.
  4. Warm tortillas gently in another pan or microwave.
  5. Lay rice, tofu mixture, and cilantro onto each tortilla.
  6. Roll burritos tightly, folding ends in, and serve hot.
