Ingredients
  

  • 3 large sweet potatoes peeled and cut into fries

  • ½ tsp garlic powder
  • Salt and pepper to taste

  • ½ cup vegan mayonnaise
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato fries with olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Spread fries in a single layer on the baking sheet; bake for 20-25 minutes, flipping halfway.
  4. Whisk vegan mayo, minced garlic, lemon juice, Dijon mustard, salt, and pepper in a bowl to make aioli.
  5. Serve fries hot with garlic aioli for dipping.
