Vegan Sushi Rolls with Avocado Recipe

Creamy vegan sushi rolls filled with ripe avocado and sticky rice, wrapped in crisp nori sheets for a fresh bite.

Ingredients
  

  • 1 cup sushi rice
  • 1 ¼ cup water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 ripe avocado sliced
  • 4 sheets nori seaweed
  • Soy sauce wasabi, pickled ginger (optional)

Method
 

  1. Rinse sushi rice until water runs clear.
  2. Cook rice with 1 ¼ cup water until tender.
  3. Mix rice vinegar, sugar, and salt; fold into cooked rice. Let cool.
  4. Place nori on rolling mat, spread rice thinly leaving edges free.
  5. Arrange avocado slices across rice center.
  6. Roll tightly using mat, seal edge with water.
  7. Slice roll into 4 equal pieces using a sharp wet knife.
  8. Serve with soy sauce, wasabi, and pickled ginger.
