Ingredients
  

  • 2 whole wheat tortillas big enough to hold your hopes
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1/2 red onion thinly sliced
  • 1 cup mushrooms sliced (cremini or button, we’re not picky)
  • 2 cups fresh spinach
  • 1/4 teaspoon black pepper
  • Salt to taste (not your ex’s level of salt, though)
  • 1/2 teaspoon smoked paprika for smoky flair
  • 2 tablespoons hummus or vegan mayo
  • Optional: red chili flakes lemon juice splash, or avocado slices for extra

Method
 

  1. Heat olive oil in your skillet—medium heat, not lava.
  2. Add garlic and onions; sauté until the onions start to soften and smell amazing.
  3. Toss in mushrooms and stir occasionally, cook for about 7–8 minutes until they start to brown.
  4. Sprinkle in salt, black pepper, and smoked paprika—aka the glam squad.
  5. Stir in spinach and cook for 1–2 minutes until wilted and slightly dramatic.
  6. Remove from heat and let your masterpiece cool for a hot second.
  7. Warm tortillas briefly in a clean pan or microwave—don’t overthink it.
  8. Spread 1 tablespoon of hummus on each tortilla like you're icing a fancy cake.
  9. Divide the cooked mixture between wraps and roll tightly, like your weekend plans.
