Ingredients
  

  • Cooked green or brown lentils – 2 cups

  • Ground cumin – 1 teaspoon
  • Smoked paprika – 1 teaspoon
  • Chili powder – ½ teaspoon
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon
  • Lemon juice – 1 tablespoon
  • Fresh parsley or cilantro chopped – 2 tablespoons
  • Tortilla wraps – 4 large
  • Shredded lettuce – 1 cup
  • Grated carrots – ½ cup
  • Diced tomatoes – ½ cup
  • Vegan mayo or hummus – ¼ cup for spreading

Method
 

  1. Heat olive oil in a pan. Add chopped onion and sauté until soft and transparent—like your patience on laundry day.
  2. Toss in garlic, cumin, smoked paprika, and chili powder. Stir for 1 minute until your kitchen smells like spicy confidence.
