Start Tomato Soup:
In a saucepan, sauté onion and garlic with a splash of olive oil until soft. Add crushed tomatoes, broth, basil, salt, and pepper. Simmer for 15 minutes. Blend if you want smooth vibes.
Prep Basil Garlic Bread:
Mix olive oil, garlic, basil, and salt. Brush over bread slices. Bake at 375°F (190°C) for 10 minutes or until golden and crispy.
Make Vegan Grilled Cheese:
Heat skillet on medium. Butter one side of each bread slice. Place bread, butter side down, add vegan cheese on top, then cover with second slice, butter side up. Grill until golden and cheese melts, flipping once.
Serve:
Pour soup into bowls, plate grilled cheese, and add garlic bread on the side. Enjoy immediately.
