Vegan Falafel with Hummus and Tahini Recipe

Ingredients
  

  • 1 ½ cups dried chickpeas soaked overnight
  • 1 small onion chopped
  • 3 garlic cloves
  • ½ cup fresh parsley
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper to taste
  • 3 tbsp flour
  • Oil for frying
For Hummus:
  • 1 can 15 oz chickpeas
  • 3 tbsp tahini
  • 2 tbsp lemon juice
  • 1 garlic clove
  • Salt and water as needed
For Tahini Sauce:
  • ¼ cup tahini
  • 2 tbsp lemon juice
  • 2 tbsp water
  • Pinch of salt

Method
 

  1. Drain soaked chickpeas. Blend with onion, garlic, parsley, cumin, coriander, salt, and pepper until coarse.
  2. Stir in flour. Shape mixture into small balls or patties. Chill for 15 minutes.
  3. Fry falafel in hot oil until golden and crisp, about 3-4 minutes per side. Drain on paper towels.
  4. Blend hummus ingredients until smooth; adjust consistency with water.
  5. Whisk tahini sauce ingredients until creamy. Serve falafel with hummus and drizzle tahini.
