Ingredients
  

  • 1 cup Medjool dates pitted
  • 1/2 cup raw almonds
  • 1/4 cup chia seeds
  • 1/4 cup shredded coconut unsweetened
  • 2 tablespoons cocoa powder optional
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method
 

  1. Pulse almonds in a food processor until finely chopped.
  2. Add dates, chia seeds, coconut, cocoa powder, maple syrup, vanilla, and salt.
  3. Blend until the mixture sticks together.
  4. Scoop and roll into 1-inch balls using your hands.
  5. Refrigerate for 30 minutes to firm up.
