Ingredients

  • ¼ cup coconut oil melted, not rock solid like your ex
  • 1 tbsp plant-based milk almond, oat, soy—whatever your blender cult prefers
  • 1 tsp vanilla extract don’t skip, you’re not a monster
  • ½ cup vegan chocolate chips or dump the whole bag, I’m not watching

Method
 

  1. Preheat oven to 180°C (350°F). Line your tray like a responsible adult.
  2. In one bowl, mix flour, baking soda, and salt. Pretend you’re on MasterChef.
  3. In another, whisk peanut butter, brown sugar, melted coconut oil, plant milk, and vanilla.
  4. Combine the dry and wet ingredients. Stir gently like it’s your therapist’s advice.
  5. Fold in chocolate chips—unless you're folding in laundry instead, which…no.
  6. Scoop dough into balls. Flatten slightly like your enthusiasm at 9 a.m.
  7. Bake for 9-10 minutes until golden and irresistible.
  8. Cool for 5 minutes. Eat three before they fully cool, obviously.
