  • cup cane sugar
  • ¾ cup unsweetened almond milk or any plant milk
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries
  • Optional: 1 tbsp turbinado sugar for topping

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment like the domestic goddess you are.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, and sugar.
  3. Cut in cold vegan butter using a pastry cutter or fork until crumbly and fabulous.
  4. Mix almond milk, vinegar, and vanilla in a cup. Let sit 2 minutes for that faux-buttermilk magic.
  5. Stir wet mix into dry until combined. Gently fold in blueberries without crushing their blueberry souls.
  6. Turn dough onto a floured surface. Pat into a 1-inch thick circle.
