Ingredients
Ripe bananas
mashed — 1¼ cups (about 3 medium)
Shredded coconut
unsweetened — ½ cup
Lime zest — 1 tablespoon
Ground flaxseed — 2 tablespoons
Water
for flax egg — 6 tablespoons
Plant-based milk
almond or coconut — ½ cup
Maple syrup — ⅓ cup
Coconut oil
melted — ⅓ cup
Vanilla extract — 1 teaspoon
All-purpose flour — 1½ cups
Baking soda — 1 teaspoon
Salt — ¼ teaspoon
Instructions
Preheat oven to 350°F (175°C). Grease or line the loaf pan.
Mix flaxseed with water; let thicken for 5 minutes (flax egg).
Mash bananas; combine with flax egg, plant milk, maple syrup, coconut oil, vanilla, lime zest, and shredded coconut.
In a separate bowl, whisk flour, baking soda, and salt.
Fold dry ingredients into wet mixture gently; avoid overmixing.
Pour batter into pan and smooth top. Bake for 55 minutes.
Cool 10 minutes in pan, then transfer to rack before slicing.
