Ingredients
  

  • Ripe bananas – 3 medium mashed
  • All-purpose flour – 1¾ cups
  • Brown sugar – ½ cup
  • Baking powder – 1 teaspoon
  • Baking soda – ½ teaspoon
  • Cinnamon – 1½ teaspoons
  • Salt – ¼ teaspoon
  • Plant-based milk almond or oat – ¼ cup
  • Coconut oil melted – ⅓ cup
  • Chopped walnuts – ½ cup
  • Vanilla extract – 1 teaspoon

Instructions
 

  • Preheat oven to 350°F (175°C) and grease your loaf pan.
  • In a large bowl, mash bananas with a fork until smooth.
  • Add sugar, plant milk, oil, and vanilla to the bananas. Whisk until blended.
  • In another bowl, mix flour, baking soda, baking powder, cinnamon, and salt.
  • Slowly add dry ingredients to wet mixture and stir until just combined.
  • Fold in the chopped walnuts. Do not overmix—this isn't CrossFit.
  • Pour batter into the loaf pan and spread evenly.
  • Bake for 50 minutes or until a toothpick comes out clean.
  • Let it cool in the pan for 10 minutes, then transfer to a wire rack.
  • Slice, serve, and pretend you didn’t eat three pieces in a row.
