  • Plant-based milk — ½ cup
  • Maple syrup — ⅓ cup
  • Coconut oil melted — ⅓ cup
  • Vanilla extract — 1 teaspoon
  • All-purpose flour — 1½ cups
  • Baking soda — 1 teaspoon
  • Salt — ¼ teaspoon
  • Dark vegan chocolate chips — ½ cup

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line loaf pan.
  • Mix chia seeds and water; let gel for 5 minutes.
  • Combine mashed bananas, chia gel, plant milk, maple syrup, coconut oil, and vanilla.
  • Whisk flour, baking soda, and salt in another bowl.
  • Fold dry ingredients into wet mixture gently.
  • Stir in chocolate chips evenly.
  • Pour batter into pan, smooth top, and bake for 50 minutes.
  • Cool 10 minutes, then transfer to rack before slicing.
