Ingredients
  

  • Ripe avocado — 1 medium
  • Firm tofu — 200g about 7 oz
  • Olive oil — 1 tablespoon
  • Turmeric powder — ½ teaspoon
  • Nutritional yeast — 1 tablespoon
  • Garlic powder — ½ teaspoon
  • Onion powder — ½ teaspoon
  • Salt and pepper — to taste
  • Bread slices your choice — 2
  • Fresh lemon juice — 1 teaspoon
  • Optional: chopped chives or parsley for garnish

Method
 

  1. Drain tofu and crumble it into a bowl.
  2. Heat olive oil in a skillet over medium heat.
  3. Add crumbled tofu, turmeric, garlic powder, onion powder, nutritional yeast, salt, and pepper.
  4. Cook for 7–8 minutes, stirring occasionally until tofu is lightly golden.
  5. Toast bread slices until crispy.
  6. Mash avocado with lemon juice, salt, and pepper.
  7. Spread mashed avocado evenly on toast.
  8. Top each toast with the tofu scramble.
  9. Garnish with chopped chives or parsley, if desired.
