Cook for 7–8 minutes, stirring occasionally until tofu is lightly golden.
Toast bread slices until crispy.
Mash avocado with lemon juice, salt, and pepper.
Spread mashed avocado evenly on toast.
Top each toast with the tofu scramble.
Garnish with chopped chives or parsley, if desired.
