Ingredients
  

  • Ripe avocado — 1 medium
  • Firm tofu — 200g about 7 oz
  • Olive oil — 1 tablespoon
  • Turmeric powder — ½ teaspoon
  • Nutritional yeast — 1 tablespoon
  • Garlic powder — ½ teaspoon
  • Onion powder — ½ teaspoon
  • Salt and pepper — to taste
  • Bread slices your choice — 2
  • Fresh lemon juice — 1 teaspoon
  • Optional: chopped chives or parsley for garnish

Instructions
 

  • Drain tofu and crumble it into a bowl.
  • Heat olive oil in a skillet over medium heat.
  • Add crumbled tofu, turmeric, garlic powder, onion powder, nutritional yeast, salt, and pepper.
  • Cook for 7–8 minutes, stirring occasionally until tofu is lightly golden.
  • Toast bread slices until crispy.
  • Mash avocado with lemon juice, salt, and pepper.
  • Spread mashed avocado evenly on toast.
  • Top each toast with the tofu scramble.
  • Garnish with chopped chives or parsley, if desired.
