Ingredients
  

  • 1 ½ cups all-purpose flour
  • ¾ cup rolled oats
  • ½ cup coconut sugar or brown sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 ½ tsp ground cinnamon
  • ¼ tsp salt
  • 1 cup unsweetened applesauce
  • ¼ cup coconut oil melted
  • ½ cup plant-based milk almond, oat, soy—pick your favorite plant child
  • 1 tsp vanilla extract
  • 1 ½ cups peeled and grated apple about 2 medium apples
  • Optional: ¼ cup chopped walnuts or pecans
  • Optional: sprinkle of cinnamon sugar on top

Method
 

  1. Preheat oven to 350°F (175°C). Line or grease your muffin tin like the kitchen boss you are.
  2. In a large bowl, whisk flour, oats, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a second bowl, mix applesauce, melted coconut oil, milk, and vanilla until it looks like smoothie fail.
  4. Combine wet and dry ingredients. Stir until just mixed—no overbeating unless you're baking out feelings.
  5. Fold in grated apples and optional nuts if you want some crunch therapy.
  6. Divide batter evenly among muffin cups. Fill about ¾ full. Top with cinnamon sugar if you like sparkle.
  7. Bake for 18–20 minutes or until a toothpick comes out clean and smug.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack. Or just eat one straight from the pan.
