Ingredients
  

For the Wraps

  • 4 large whole wheat tortillas
  • 1 zucchini sliced lengthwise
  • 1 red bell pepper sliced into strips
  • 1 yellow bell pepper sliced into strips
  • 1 small red onion thinly sliced
  • 1 cup baby spinach
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper

For the Hummus

  • 1 can 15 oz chickpeas (drained and rinsed)
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 1 clove garlic minced
  • ½ tsp cumin
  • 2 tbsp olive oil
  • Salt to taste

Instructions
 

Grill the Veggies

  • Toss zucchini, peppers, and onion with olive oil, salt, and pepper.
  • Grill over medium heat for 3–4 minutes per side until slightly charred.

Make the Hummus

  • Blend chickpeas, tahini, lemon juice, garlic, cumin, and olive oil until smooth.
  • Add salt to taste.

Assemble the Wraps

  • Spread hummus over each tortilla.
  • Layer with grilled vegetables and fresh spinach.

Wrap & Serve

  • Roll tightly and serve warm or at room temperature.
