Ingredients
  

For the BBQ Jackfruit

  • 2 cans 20 oz each young green jackfruit (drained, rinsed, and shredded)
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup BBQ sauce store-bought or homemade
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup vegetable broth

For Serving (Optional)

  • Burger buns or tortillas
  • Coleslaw
  • Pickles
  • Extra BBQ sauce

Instructions
 

Prep the Jackfruit

  • Drain, rinse, and pat dry jackfruit.
  • Use a fork to pull it apart into shreds.

Layer the Crockpot

  • Add jackfruit, onion, and garlic to the slow cooker.
  • Pour in BBQ sauce, maple syrup, apple cider vinegar, smoked paprika, chili powder, salt, and black pepper.
  • Stir to coat everything evenly.

Slow Cook

  • Pour vegetable broth over the mixture.
  • Cover and cook on low for 4 hours (or high for 2 hours).

Shred & Finish

  • Use forks to shred jackfruit further.
  • Stir and let it absorb more sauce for 10 minutes.
