Ingredients

  • 1 cup cherry tomatoes halved
  • 1 zucchini sliced
  • ½ cup bell pepper diced
  • 3 cloves garlic minced
  • 1 tbsp balsamic vinegar
  • ½ tsp red pepper flakes optional

For Garnishing

  • 2 tbsp fresh basil chopped
  • 1 tbsp nutritional yeast optional

Instructions
 

Crisp the Gnocchi

  • Heat olive oil in a skillet over medium heat.
  • Add gnocchi, cook for 5-7 minutes, stirring until golden and crispy.

Cook the Vegetables

  • In the same pan, add garlic and sauté for 1 minute.
  • Toss in cherry tomatoes, zucchini, and bell pepper.
  • Cook for 5 minutes until veggies are tender.

Bring it Together

  • Add crispy gnocchi back to the pan.
  • Stir in balsamic vinegar, salt, pepper, and red pepper flakes.
  • Cook for 2 more minutes, letting flavors meld.
