Prepare the Lentil Loaf
- Preheat oven to 375°F (190°C).
- Line a loaf pan with parchment paper.
- In a skillet, sauté onions and garlic in olive oil until soft.
- Mash lentils in a large bowl, leaving some texture.
- Stir in breadcrumbs, oats, flaxseed mixture, BBQ sauce, soy sauce, and spices.
- Mix well and press into the loaf pan.
Make the BBQ Glaze
- In a bowl, whisk BBQ sauce, maple syrup, and apple cider vinegar.
- Spread half the glaze over the loaf.
Bake the Lentil Loaf
- Bake for 40 minutes.
- Brush with remaining glaze and bake for 10 more minutes.
- Let it cool for 10 minutes before slicing.
- Prepare the Mashed Potatoes
- Boil potatoes in salted water until fork-tender (about 15 minutes).
- Drain and mash with vegan butter, plant milk, salt, and pepper.

- Slice lentil loaf and plate with mashed potatoes.
