  • 1/4 cup aquafaba chickpea water
  • 1/2 cup sunflower oil
  • 1 teaspoon lemon juice
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon mustard
  • Salt to taste
For Assembly:
  • 4 burger buns
  • Lettuce leaves
  • Tomato slices
  • Pickles
  • Red onion rings

Method
 

  1. Mix mashed beans, carrot, onion, breadcrumbs, oat flour, and seasonings in a bowl.
  2. Form into 4 even patties and chill for 10 minutes.
  3. Heat oil in a skillet, cook patties 5–6 minutes per side until crispy and golden.
  4. For mayo, blend aquafaba with lemon juice, vinegar, mustard, and salt until foamy.
