Ingredients

  • 3 cups cooked rice preferably day-old
  • 1 block firm tofu pressed and cubed
  • 1 cup frozen peas and carrots mix
  • 3 green onions sliced
  • 3 cloves garlic minced
  • 1 tbsp ginger minced
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • ½ tsp black pepper
  • 1 tbsp sriracha optional

Instructions
 

Prepare the Tofu:

  • Press tofu for 10 minutes to remove moisture.
  • Cut into cubes and pat dry.

Cook the Tofu:

  • Heat 1 tbsp sesame oil in a skillet over medium heat.
  • Add tofu and cook until golden brown on all sides.
  • Remove from pan and set aside.

Stir-Fry Everything Together:
