Method
 

  1. Preheat oven to 400°F (200°C) because cold food is not the vibe.
  2. Toss cauliflower florets with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  3. Spread evenly on a baking sheet. Roast for 25 minutes until golden and slightly crispy.
  4. Mix vegan mayo, lemon juice, minced garlic, and mustard for the sauce. Stir until smooth.
  5. Warm tortillas in a dry pan or microwave—nobody wants a cold wrap.
  6. Add lettuce, onion, carrots, and roasted cauliflower down the center of each wrap.
