Ingredients
  

  • 1 cup dried chickpeas soaked overnight
  • 1 small onion chopped
  • 3 garlic cloves
  • 1 cup fresh parsley leaves
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp chili powder optional
  • 1 tsp baking powder
  • 2 tbsp flour or chickpea flour
  • Salt and pepper to taste
  • Olive oil for frying or brushing
For the hummus:
  • 1 cup cooked chickpeas
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 1 garlic clove
  • Salt to taste
For the pickles:
  • ½ cup sliced pickles cucumber or mixed

Method
 

  1. Drain soaked chickpeas and pulse with onion, garlic, and parsley in a food processor until coarse but not mushy.
  2. Add cumin, coriander, chili powder, baking powder, flour, salt, and pepper. Pulse again to combine.
  3. Form mixture into small balls or patties.
  4. Heat olive oil in a frying pan or preheat oven to 200°C.
  5. Fry falafel until golden on all sides or bake for 20 minutes, flipping halfway.
  6. For hummus, blend cooked chickpeas, tahini, lemon juice, garlic, and salt until creamy.
  7. Serve falafel warm with a generous scoop of hummus and crunchy pickles on the side.
