Ingredients
  

For the Fajitas:
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 large red onion sliced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp chili flakes optional but fabulous
  • Salt and pepper to taste
  • 6 small flour or corn tortillas soft and warm, like your soul
For the Guacamole:
  • 2 ripe avocados
  • Juice of 1 lime
  • 1 small tomato diced
  • 1 clove garlic minced
  • 2 tbsp chopped red onion
  • 2 tbsp fresh cilantro chopped
  • Salt to taste

Method
 

  1. Heat olive oil in skillet over medium-high heat.
  2. Toss in sliced bell peppers and onions, season with paprika, cumin, garlic powder, chili flakes, salt, and pepper.
  3. Sauté for 10–12 minutes until veggies are soft and a little charred.
  4. While that sizzles, mash avocado in a bowl.
  5. Add lime juice, tomato, garlic, onion, cilantro, and salt. Stir it like you mean it.
  6. Warm tortillas on a pan or directly over the burner if you’re a rebel.
  7. Load each tortilla with sautéed veggies and a generous scoop of guac.
